Looks tasty but the recipe says "See Note" about the coffee crystals, then doesn't include a note. What's the note?

The note is at the top of the article Note: This dough must be prepared in advance. We prefer using instant espresso coffee (such as the Medaglia D’oro brand, available at most supermarkets) instead of instant coffee crystals. Our 2013 winning cookie is from Dianne Sivald of White Bear Lake, who adapted the recipe from “Cookies for Christmas” (Better Homes and Gardens Books).

The "1 inch in diameter" part of this recipe is almost certainly wrong. I made these cookies last night, and even though I made them larger on purpose (because a 1-inch cookie is tiny -- barely larger than a quarter), I still ended up with 10 dozen cookies. In order to yield four dozen as the recipe says, the diameter should be between 2.25 and 2.5 inches. I believe this is confirmed by the photo that accompanies this recipe; otherwise, the plate that the cookies are sitting on is only 2.5 inches across -- shorter than the length of your index finger.

How is this recipe gluten free, as indicated in the video, when it includes 2 C of flour?

I agree with cfinke- these are very small cookies, must have been a typo on the diameter. They are easy to make and I've gotten great reviews on them, in spite of the size.

For the icing, what kind of shortening can you use? butter? margarine? or does it mean crisco?

I agree about diameter and thickness. I made the logs about 1.5 inches diameter since 1" seemed way too small - and then it was about 9" long.I cut those into 48 slices - but since they don't really spread, they were too thick and then too-small diameter. Make the logs at least 2" diameter, probably 6" long, and then the slices will be closer to 1/8 inch.

Light or dark brown sugar?

I used light brown sugar. For the coffee, I used a packet of Starbucks Via decaf and got a strong but good coffee flavor. I made them small and like them that way. A wonderful cookie.

I made these delicious cookies, but they look nothing like the picture! The size recommendations in the recipe have to be a mistake. I have a lot of small cookies, and I used a 2"diameter (not the 1" in the recipe). And mine are so dark, they look very similar to the chocolate icing. I am hoping the StarTrib will edit the recipe!
