When Wise Acre Eatery replaced a former frozen custard stand, chef Beth Fisher didn’t ignore the leftover custard-making machines. Her tangy organic version — there’s always chocolate and vanilla — is best enjoyed in the audacious samplers for two ($10) or four ($15), which boast a flurry of irresistible toppings (bacon peanut brittle!) and sauces (rhubarb caramel!).
