There is also the ability to use Google Voice for texting all phones from a real number. Yes, there is only a native iPhone app, but it can be used on the iPad as well. In addition there is also the web-interface and some other iPad native apps (I tend to shy away from 3rd-party, but here might work).
Not true at all.... she can text anyone and everyone by getting a Google Voice account, then installing the app on her iPad. With GV, she'll get a phone number that anyone can send texts to her on. There are even apps that let you make phone calls using the GV service and your tablet. (If you're going to be the tech guru, it would be good if you had some basic knowledge of current trends.)
You can also get the Text Plus app which allows you to text phones and other numbers like Google Voice. Plenty of ways to text on an iPad.
