Why would you buy 16c of store bought stock at a cost of around $12 to make stock? That's insane. Do everything this recipe says except replace the store bought stock with water, replace the 2 lbs chicken parts with the carcass of a whole chicken you made, or the bones from a package of cut up fryer, or easiest of all the carcass of one of those rotisserie chickens you buy when you don't know what else to make for dinner! Then simmer for 6-8 hours instead of 45 minutes. Rich, flavorful stock for pennies instead of 20 dollars or more for this recipe. Throw in any veggies in your fridge that have seen better days, the butt end of the celery and all the leafy parts, onion peels and trimmings...

Oh, and add more veggies. The vegetables in stock give it depth of flavor. Don't worry about chopping it up pretty, just rough chop them into chunks.
