So, they won't attend their children's weddings, they won't attend baptisms, birthdays, or other family functions unless everyone coalesces to their wishes? I'd say you're better off without their snobish attitudes about their lifestyles - count your blessings that they will not be there.

It might not be snobbish, it might a person strong in their beliefs. HOWEVER, when a person invites you into their home, you should show them courtesy and respect. They are willing to add a vegan meal to all the other crazy expenses that Thanksgiving produces. It is rude to say my way or the highway in someone elses house. I would simply state that the meal you prepare is important to your family and you are more than willing to make it vegan friendly with a great meal to offer that will make everyone happy and if they say no that is on them.
