Thanksgiving the easy way

It might not seem like, but Thanksgiving dinner is one of the easiest to prepare.

University communities are great places for sumptuous Thanksgiving dinners. When our son moved to AZ for grad school, the "orphans" gathered. I believe the 'basics' were turkey, dressing, gravy. He roasts the turkey and makes the dressing. Each guest was asked to bring *the* dish that made Thanksgiving for them. Southern Dough brought cornbread dressing, someone else brought The Green Bean Casserole, someone else. . . you get the gist. Gourmet standards are not required and they have discovered that the important part is in the gathering together for a good meal and lots of laughs.

The easiest to prepare. . . and that big ol' bird can be so daunting to a new cook. I remember those days and the terror that would set in at the thought that it might not turn out right. It's such a big piece of meat!! Fortunately, I've never bungled the bird but I still remember the fear I felt the first couple times I roasted a birdy.

So glad to see someone finally take this perspective! For each of the last 10+ years, I've hosted Thanksgiving for 50 - 60 people (occasionally up to 70+) and I still say its the easiest holiday to host. I do everything the day before, sleep in the morning of and have 3 days to clean up. Plus, no expectations from the guests - feed 'em, give 'em a beverage and set 'em in front of the TV. Done.
