Hot dogs are deliberately made from the most inferior cuts of meat. If you prepare a premium, homemade bun for these, you defeat the purpose, the fundamental thesis of the hot dog.

It would be nice if scientists could come up with an artificial instant potato flavor you could add to real potatoes to give them that instant potato taste.

This is one great recipe for buns! They turned out big and light and awed the entire group we invited over for a barbeque. The tips on what exactly to look for (the windowpane, the indentation, etc.) were critical for success.. I never know when kneading is enough, and when dough is exactly doubled. Thanks for a great recipe!
